Classic Italian Meatballs That Stay Tender Every Time — Ready in Under an Hour

Ingredients
  

  • 1 lb ground beef (80/20 preferred)
  • ½ lb ground pork
  • 2 slices white bread, crusts removed
  • ½ cup whole milk
  • cup finely grated Parmesan
  • 1 large egg
  • 3 cloves garlic, grated on a Microplane
  • ¼ cup finely chopped fresh parsley (flat-leaf)
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp olive oil for searing
  • 1 24-oz jar good-quality marinara (or homemade)

Instructions
 

  • Preheat & prep: Take the meat out of the fridge about 15 minutes before you start so it's not ice-cold.
  • Make the panade: In a small bowl, tear the bread into small pieces and pour the milk over it. Let it sit for 5 minutes, then mash it with a fork into a paste. It should look like wet oatmeal.
  • Combine the meat mixture: In a large bowl, combine the beef, pork, panade, Parmesan, egg, garlic, parsley, salt, pepper, and red pepper flakes if using. Use your hands and mix gently until just combined, about 30 seconds. Don't squeeze or knead.
  • Form the meatballs: Lightly wet your hands to keep the mixture from sticking. Roll into golf-ball-sized balls — about 1.5 tablespoons each. Place them on a sheet pan. You should get about 16–18 meatballs.
  • Sear the meatballs: Heat the olive oil in the skillet over medium-high heat until shimmering. Add the meatballs in a single layer (work in batches if needed). Cook for 3–4 minutes per side, turning gently, until deeply browned on at least two sides. Don't move them too early — let the crust form.
  • Simmer in sauce: Reduce the heat to low. Pour the marinara sauce around the meatballs (not on top). Cover and simmer for 15–20 minutes, until the meatballs are cooked through and the sauce has thickened slightly.
  • Finish and serve: Spoon the sauce and meatballs onto a platter or into a shallow bowl. Top with a few fresh basil leaves and a shower of Parmesan. Let them rest for about 5 minutes before serving.

Notes

Storage: Cooked meatballs in sauce keep in the fridge for up to 4 days. They actually get better on day 2. To freeze: flash-freeze the uncooked meatballs on a sheet pan, then transfer to a freezer bag. Cook from frozen: sear straight from the freezer (add 2 minutes per side), then simmer in sauce as directed.
Tips: Don't skip the panade soak time. Wet hands make shaping easier. One test meatball saves the batch — cook one first to check seasoning. Temperature matters — wait until the oil shimmers before adding the meatballs.
Swaps: Dairy-free: omit Parmesan, use unsweetened oat or almond milk for the panade. Gluten-free: use GF bread or crushed crackers. All-beef: use 1.5 lbs 80/20 ground beef and add 1 tbsp olive oil. Spicy: double red pepper flakes and add a Calabrian chili to the sauce. Baked: skip sear, bake at 400°F for 15-18 minutes, then simmer in sauce for 10 minutes.
