Whipped Pink Lemonade

Six ingredients and ten minutes stand between you and a glass of whipped pink lemonade that looks like it came from a café counter. Frozen strawberries and sweetened condensed milk blend into a thick, frothy cloud — part milkshake, part snow cone — and the pale pink color does the rest.

Ingredients
  

  • 1 can (12 oz) frozen pink lemonade concentrate, softened just enough to scoop
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups frozen strawberries
  • 3 cups ice cubes
  • 1/2 cup cold water (sparkling water also works)
  • 1/8 teaspoon salt

For Serving

  • 1 lemon thinly sliced into wheels
  • 1 per glass fresh strawberry, for the rim or floating in the foam

Instructions
 

  • Measure everything first: set out the lemonade concentrate, condensed milk, strawberries, ice, water, and salt. It takes less than a minute and keeps you from realizing mid-blend that the ice is still in the freezer.
  • Add the liquids first: lemonade concentrate, condensed milk, cold water, and salt into the blender. Liquids first stops the blender from stalling on the ice.
  • Add the frozen strawberries on top of the liquid. Do not thaw them first — frozen is non-negotiable for the texture.
  • Add the ice last so it sits closest to the blade. That order blends fastest.
  • Blend on low for 10 seconds to get everything moving, then crank it to high and blend for 45 to 60 seconds.
  • Stop the blender, scrape down any frozen bits from the sides, and pulse a few times. You are looking for a thick, smooth, pourable texture — like a very thick smoothie.
  • Stop before it turns into soup. A few tiny ice bits are actually good — they keep the texture interesting.
  • Taste and adjust: too sweet? Add a squeeze of fresh lemon. Too thin? Add a handful of ice and pulse. Too thick? Add a splash of water.
  • Pour into glasses and let the froth settle for ten seconds. The foam rising to the top is the whipped look.
  • Garnish deliberately: a thin lemon wheel on the rim and one strawberry placed, not dropped. Serve with a straw.

Notes

Use frozen strawberries, not fresh — fresh berries release too much liquid and turn the drink watery. Don't over-blend: stop the moment the texture looks thick and pourable. For a dairy-free version, use coconut sweetened condensed milk and freeze coconut milk into cubes to replace half the ice. Leftovers are better frozen into popsicle molds than kept in the fridge; the froth disappears after a few hours. A tiny pinch of salt is not optional — it rounds out the sweetness.
