Ingredients
  

For the Croutons (homemade)

  • 2 cups sourdough bread, torn into 1-inch pieces

  • 1 garlic clove, smashed

For the Dressing (homemade)

  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 1 anchovy fillet
  • 1 small garlic clove, microplaned
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • salt and pepper to taste

For the Salad

  • 1 lb dried pasta (cavatelli or rigatoni)
  • 1 large head romaine lettuce, chopped
  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup shaved Parmesan cheese

Instructions
 

  • Make the croutons: Preheat oven to 375°F (190°C). In a bowl, toss the torn sourdough with olive oil, salt, and the smashed garlic clove. Spread in a single layer on a sheet pan. Bake 8-10 minutes until golden and crunchy. Let cool completely (they crisp more as they sit).
  • Cook the pasta: Bring a large pot of heavily salted water to a boil. Cook the pasta 1 minute shy of al dente (it should have a tiny bite left). Drain and immediately spread on a sheet pan in a single layer to cool completely. This prevents the soggy salad problem.
  • Make the dressing (if using homemade): In a bowl, whisk together the egg yolk, Dijon mustard, anchovy, and microplaned garlic. Slowly stream in the olive oil while whisking constantly until emulsified. Whisk in the lemon juice, then season with salt and pepper to taste. (If using store-bought dressing, skip this step and just improve it with a squeeze of lemon and an extra anchovy if desired.)
  • Prep the greens: Chop the romaine into bite-sized pieces. Spin in a salad spinner until bone-dry. Pat with a clean towel if needed. Wet lettuce is the enemy of texture.
  • Assemble the salad: In your largest mixing bowl, add a thin layer of dressing to the bottom. Add the cooled pasta, romaine, chicken, and most of the Parmesan (reserve a handful for the top). Drizzle the remaining dressing over everything. Toss gently but thoroughly — using clean hands works best to distribute without bruising the greens.
  • Finish and serve: Top with the reserved croutons and remaining Parmesan ribbons. Serve immediately. For a buffet or gathering, keep croutons on the side so guests can add their own and keep them crunchy.

For store-bought shortcuts: Use 1/2 cup good-quality Caesar dressing instead of the homemade version. For croutons, use 1 cup store-bought croutons. Follow the same assembly instructions.
Dairy-Free: Use dairy-free Caesar dressing and omit the Parmesan, or use a vegan parm alternative. Gluten-Free: Use gluten-free pasta and replace croutons with toasted pepitas or sunflower seeds.
