Sour Cream Blueberry Bread That Stays Moist for Days (No Sinking Berries)

This is the blueberry bread I make every summer—tender, tall, and loaded with berries that never sink. The sour cream keeps it moist for days, and the flour dredge keeps every berry right where you put it. One bowl, one pan, and about 15 minutes of work.

Ingredients
  

For the bread

  • 1 1/2 cups all-purpose flour
  • 1 tbsp all-purpose flour (for dredging)
  • 1 cup full-fat sour cream
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 zest of 1 lemon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups fresh or frozen blueberries

For the topping

  • 1 tbsp turbinado sugar

Instructions
 

  • Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper, letting it hang over the long sides to create a sling.
  • In a medium bowl, toss blueberries with 1 tablespoon flour until lightly coated. Set aside.
  • In a large bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, and salt.
  • In another bowl, whisk together melted butter, sugar, eggs, sour cream, vanilla, and lemon zest until smooth.
  • Pour wet ingredients into dry and fold gently with a rubber spatula until just combined—a few streaks of flour are fine. Fold in floured blueberries in about 5 strokes. Do not overmix (12 folds max).
  • Pour batter into prepared pan, smooth the top, and sprinkle generously with turbinado sugar. Bake for 55–65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pan 15 minutes, then lift out and cool completely on a wire rack before slicing.

Notes

Room temperature ingredients are non-negotiable—cold eggs will seize the melted butter. For frozen blueberries, do not thaw; toss them frozen with the flour. Store tightly wrapped at room temperature for up to 4 days, in the fridge for 5, or freeze sliced for up to 3 months. Reheat slices in the toaster for the best texture.
