My Brown Butter Cornmeal Cake I Call My Leo Day Cake

This brown butter cornmeal cake is the birthday dessert that doesn't need buttercream. A crackly golden top, tender crumb from sour cream, and a honeyed glaze that sinks in. One bowl, one pan, one glaze — dramatic and worth every minute.

Equipment

  • 9-inch springform pan
  • Medium saucepan
  • Large Mixing Bowl
  • Whisk
  • Flexible spatula
  • Cooling rack
  • Parchment Paper

Ingredients

For the cake

  • 10 tbsp unsalted butter
  • 1 cup fine cornmeal (not polenta grind)
  • 1 cup all-purpose flour, spooned and leveled
  • 1 cup full-fat sour cream, room temperature
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract (real)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

For the glaze

  • 1/2 cup powdered sugar
  • 2 tbsp sour cream
  • 1 tbsp honey
  • 1 pinch salt

Instructions

  • Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom with a parchment round.
  • Brown the butter: Melt butter in a medium saucepan over medium heat, swirling occasionally. When the foam subsides and amber specks appear (about 5 minutes), pour into a heatproof bowl to stop cooking. Let cool 5 minutes.
  • In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  • In a separate medium bowl, whisk sugar, room-temperature sour cream, eggs, and vanilla until smooth. Stream in the cooled brown butter while whisking constantly.
  • Pour wet mixture into dry ingredients. Fold gently with a spatula until just combined (a few streaks of flour are fine; do not overmix).
  • Pour batter into prepared pan and smooth top. Bake 40-45 minutes until top is deep golden and crackly, and a toothpick inserted in center comes out clean.
  • Cool in pan 10 minutes, then transfer to a wire rack to cool completely before glazing.
  • Make the glaze: Whisk together powdered sugar, sour cream, honey, and salt until smooth and pourable. Spoon over cooled cake, letting it drip naturally down the sides.

Notes

Don't skip the parchment: This delicate crumb sticks without it. Set eggs and sour cream out an hour ahead — cold dairy seizes brown butter. A springform pan makes release easy. For the glaze, let it drip naturally; intentional imperfection looks deliberate. Storage: Unglazed cake keeps at room temp 3 days, fridge 5 days, or freeze up to 2 months (wrap well, thaw overnight in fridge). Glaze day of serving. Gluten-free option: Swap flour for 1:1 GF baking blend with xanthan gum.
