Iced Apple Crisp Oatmilk Macchiato

This is the iced apple crisp macchiato that tastes like the inside of a pastry instead of a candle. Spiced apple syrup, barista oatmilk foam, and espresso stack into five minutes of actual work. The coffee shop version costs seven dollars. This one costs two.

Ingredients
  

For the Apple Syrup

  • 1/4 cup apple cider or apple juice, not sparkling
  • 1 1/2 tablespoons brown sugar, light or dark
  • 1 whole cinnamon stick
  • 1 pinch salt
  • 1/4 teaspoon vanilla extract

For the Macchiato

  • 1 cup oat milk, barista blend preferred
  • 1 shot espresso, or 1/2 cup strong brewed coffee
  • Ground cinnamon, for the top
  • Optional pinch of brown sugar, for the top

Instructions
 

  • In a small saucepan, combine the apple cider, brown sugar, cinnamon stick, and salt. Bring to a gentle simmer over medium heat — small bubbles along the edges, not a rolling boil.
  • Simmer for 5–7 minutes until the syrup reduces by about a third and coats the back of a spoon. Do not rush this; the reduction is what makes it taste like apple crisp filling instead of apple juice.
  • Remove the syrup from heat and stir in the vanilla extract. Let it sit while you prep the glass.
  • Remove the cinnamon stick. Pour 1 1/2 tablespoons of the warm syrup into the bottom of a tall glass and swirl it around to coat the bottom quarter.
  • Heat the oat milk in the microwave for 30–45 seconds until warm but not hot. Whisk vigorously for 30 seconds until doubled in volume and full of tiny creamy bubbles.
  • Pour the foamy oat milk slowly into the glass from about 6 inches above the rim — the milk settles over the syrup while the foam rises.
  • Pour the espresso directly over the top foam in a slow stream so it sinks through in ribbons. For maximum flavor in every sip, stir it together.
  • Dust the top generously with ground cinnamon and a pinch of brown sugar if you want it extra close to the crisp topping.

Notes

The syrup keeps in an airtight glass jar in the fridge for up to 2 weeks, or frozen in an ice cube tray for 3 months. Reheat individual syrup portions in the microwave for 15–20 seconds before assembling. Never reheat the finished drink — the oatmilk foam will collapse. For a spicier version, add a pinch of nutmeg and cloves to the syrup while it simmers. No espresso machine? Use 1/2 cup strong cold brew concentrate and skip the espresso pour.
