Honey Lime Chicken & Avocado Rice Bowls

Ingredients
  

For the Pickled Onions

  • 1 small red onion, thinly sliced
  • Juice of 1 lime
  • Pinch of salt

For the Cilantro-Lime Rice

  • 1 cup jasmine rice
  • 1 1/2 cups water
  • Zest of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

For the Avocado Crema

  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt (or sour cream)
  • Juice of 1/2 lime
  • 1 handful fresh cilantro
  • 2 tablespoons water (or more to thin)
  • Salt to taste

For the Honey Lime Chicken

  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari)
  • Juice of 1/2 lime
  • 1 tablespoon neutral oil (avocado or grapeseed)
  • Salt and pepper to season

  • Lime wedges for serving

Instructions
 

  • Prep the ingredients: Juice the limes. Zest one of them. Chop the cilantro. Slice the onion as thin as you possibly can — a mandoline makes this effortless, but a sharp knife works.
  • Pickle the onions: Toss the sliced red onion in a bowl with the juice of 1 lime and a generous pinch of salt. Use your hands to massage it for about 30 seconds — this softens the onion and forces the color out. Let it sit while you do everything else.
  • Cook the rice: Rinse the rice in a fine-mesh strainer until the water runs clear. Add it to a small saucepan with 1 ½ cups of water and a pinch of salt. Bring to a boil, cover, reduce to low, and cook for 15 minutes. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork. Stir in the lime zest and half the chopped cilantro.
  • Make the avocado crema: While the rice cooks, add the avocado, Greek yogurt, juice of ½ lime, a handful of cilantro, 2 tablespoons of water, and a pinch of salt to a blender. Blend until completely smooth. Taste and add more salt or lime as needed. The consistency should be just thick enough to hold its shape on a spoon — thin with water a tablespoon at a time if it's too thick.
  • Cook the chicken: Pat the chicken dry with paper towels. Season both sides with salt and pepper. In a small bowl, whisk together the honey, soy sauce, and juice of ½ lime. Heat a large skillet over medium-high heat and add a tablespoon of neutral oil. When the oil shimmers, add the chicken. Cook for 5-6 minutes per side, until golden brown and cooked through (165°F internal temp). Reduce the heat to medium-low, pour the honey-lime mixture into the pan, and let it bubble for 1-2 minutes, turning the chicken to coat. The glaze should thicken and cling to the chicken. Remove from the pan and let it rest for 5 minutes before slicing against the grain.
  • Assemble the bowls: Start with a generous smear of avocado crema on the bottom of each bowl. Add a scoop of cilantro-lime rice. Arrange the sliced chicken on one side of the rice. Fan the avocado slices on the other side. Top with the pickled onions and any remaining cilantro. Finish with a sprinkle of flaky salt and a lime wedge on the side.

Notes

Do not overcrowd the pan when cooking the chicken — cook in batches if doubling the recipe, or the chicken will steam instead of sear. Let the chicken rest a full 5 minutes before slicing to keep it juicy. Taste the rice before serving; if you can't taste the lime distinctly, add more zest or a squeeze. The pickled onions are not decorative — they provide essential acid to balance the honey and crema. Store leftovers: rice, chicken, and pickled onions in an airtight container for up to 3 days; keep the crema separate with plastic wrap pressed directly onto the surface (it stays green for 3 days). Slice avocado fresh each day.
