  • 1/2 cup plain Greek yogurt (full fat or 2%)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups dark chocolate chunks or chips

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Cream butter and sugars: In a stand mixer fitted with the paddle attachment (or a large bowl with a wooden spoon), beat the softened butter, brown sugar, and granulated sugar together until light and fluffy — about 2 minutes on medium speed. Scrape down the sides.
  • Add wet ingredients: Beat in the egg and vanilla until combined. Add the Greek yogurt and mix on low speed until just incorporated. The dough may look slightly curdled — that is normal.
  • Mix dry ingredients: In a small bowl, whisk together the flour, baking soda, and salt. Add to the wet mixture in two additions, mixing on low speed until just combined. A few streaks of flour are fine.
  • Fold in chocolate: Add the chocolate chunks or chips and fold by hand with a spatula until evenly distributed. Scrape the bottom to catch any flour pockets.
  • Chill dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This step is not optional — it prevents spreading and gives thick cookies.
  • Scoop and bake: Using a 2-tablespoon cookie scoop, portion the dough into balls and place 2 inches apart on the prepared baking sheet. Bake for 12 to 14 minutes, rotating the pan halfway through, until edges are golden and centers look slightly underdone (shiny and soft).
  • Cool: Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Do not move them earlier or they will fall apart.

Notes

Storage: Baked cookies stay soft in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months, or freeze unbaked scooped dough balls for up to 3 months (bake from frozen, adding 2 minutes).
Make-ahead tip: Scoop the dough into balls and refrigerate in an airtight container for up to 5 days — bake a few fresh each day.
Don't skip the chill time! I have tested this dough at 0, 15, 30, and 120 minutes. The 30-minute version produces thick, chewy cookies with defined edges. The zero-minute version is a flat, greasy mess.
Flour weight: 1 3/4 cups all-purpose flour equals about 220g. Weigh if you have a scale for best results; otherwise, spoon and level to avoid dense cookies.
Yogurt note: Use full fat or 2% plain Greek yogurt. Nonfat yogurt has too much water and will make cookies gummy. Do not use flavored yogurt.
