Frozen Mojito Mocktail

That first cold sip of crushed ice with fresh mint and lime is a handheld vacation. This frozen mojito mocktail is crisp, minty, and blended in just 5 minutes. No alcohol, all flavor.

Ingredients
  

  • 3 fresh limes
  • 1/2 cup fresh mint leaves (loosely packed)
  • 1/4 cup simple syrup
  • 2 cups ice cubes
  • 1/4 cup club soda or seltzer

Instructions
 

  • Prep the simple syrup (if needed): In a small saucepan, combine 1/2 cup water and 1/2 cup sugar. Bring to a simmer, stir until sugar dissolves, then cool. (Or use store-bought.)
  • Juice the limes: Roll them on the counter first to get the most juice. You need about 1/4 cup total.
  • Load the blender: Add 2 cups ice, 1/4 cup lime juice, 1/4 cup simple syrup, and 1/2 cup mint leaves (whole!).
  • Blend: Start on low, then ramp to high. Pulse 3–5 times until it looks like a snow cone — you want tiny ice crystals, not a smoothie.
  • Add the fizz: Pour in 1/4 cup club soda and pulse two times. Just two — more and you'll lose the carbonation and end up with flat slush.
  • Taste and adjust: Is it sweet enough? Sour enough? Add a splash more simple syrup or lime juice and pulse once.
  • Pour into glasses: Divide between two rocks glasses or one big jar. Garnish each with a fresh mint sprig and a lime wheel.

Notes

Don't overdo the mint — 1/2 cup is plenty. Adjust sweetness to your limes. Club soda is not optional for that authentic feel. For extra frothiness, add a tablespoon of aquafaba before blending. If you batch, keep simple syrup and lime juice cubes ready in the fridge or freezer. Drink immediately after blending, as it separates quickly.
