French Onion Chicken Orzo Casserole

Ingredients
  

  • 3 large yellow onions (about 1½ lbs)
  • 4 tbsp unsalted butter
  • 1 tbsp brown sugar
  • ½ cup dry white wine or dry vermouth

Broth & Chicken

  • cups low-sodium beef broth
  • cups low-sodium chicken broth
  • lbs boneless skinless chicken thighs (about 4–5)

Pasta & Cheese

  • 1 cup dried orzo
  • 6 oz Gruyère, grated (about 1½ cups)
  • 2 oz Parmesan, finely grated (about ½ cup)

Seasoning & Garnish

  • few sprigs fresh thyme (or 1 tsp dried)
  • to taste salt
  • to taste black pepper
  • fresh parsley or chives for garnish (optional)

Instructions
 

  • Preheat & Prep: Preheat your oven to 375°F. Position a rack in the middle. Grate both cheeses now.
  • Caramelize the onions: Melt butter in a large oven-safe skillet or Dutch oven over medium heat. Add sliced onions, brown sugar, and a pinch of salt. Stir to coat, then cover and cook for 8 minutes, stirring once halfway. Uncover, reduce heat to medium-low, and cook 8–10 minutes more until deep golden brown and jammy.
  • Deglaze: Pour in white wine (or alternative). Stir, scraping up browned bits. Simmer about 2 minutes until mostly evaporated.
  • Add liquids and chicken: Stir in beef broth, chicken broth, and thyme. Nestle chicken thighs into liquid. Bring to a gentle simmer.
  • Add orzo: Sprinkle orzo evenly over the top—do not stir. Press gently under the surface. Cover and bake at 375°F for 25 minutes.
  • Add cheese: Remove lid; shred chicken coarsely with two forks right in the dish. Stir together. Taste and season with salt and pepper. Sprinkle Gruyère and Parmesan evenly on top.
  • Finish uncovered: Return to oven, uncovered, and bake 10–12 minutes until cheese is melted and browned. For extra browning, broil the last 2 minutes—watch closely.
  • Rest and serve: Let casserole sit 5 minutes before serving. Garnish with fresh chives or parsley if desired. Scoop from corners for crispy cheese edges.

Notes

Chef's Tips: Don't skip the covered cook time for the onions—it traps steam and softens them fast. Grate your own cheese; pre-shredded contains starch that makes the topping grainy. Let the casserole rest 5 minutes after baking so the orzo firms up. If you forget to cover the onions initially, it'll still taste good, just need a few extra minutes. For gluten-free: use GF orzo (Jovial brand) and same bake time. For lower-carb: swap orzo for cauliflower rice, bake covered 15 minutes, then top with cheese.
