Creamy Garlic Sauce
- 4 tbsp unsalted butter (or salted; adjust salt)
- 6 cloves garlic, minced or pressed
- 1 1/2 cups heavy cream
- 1/3 cup Parmesan cheese, finely grated from a wedge
- 1/2 tsp salt, or to taste
- 1/4 tsp freshly cracked black pepper
- 1 pinch freshly grated nutmeg (optional but recommended)
- Fresh parsley, chopped, for garnish (optional)
Set your skillet over medium-low heat and let it warm for a minute before adding butter.
Add the butter and let it melt slowly until it's foamy around the edges — you want a gentle hiss, not a sputtering sizzle.
Add the minced garlic and stir for about 90 seconds until fragrant and soft, without taking on any color.
Stream in the heavy cream slowly while whisking constantly, keeping the heat on medium-low.
Turn the heat up to medium and bring the sauce to a gentle simmer — tiny bubbles around the edges with a calm center. Never let it reach a rolling boil.
Let the sauce bubble gently for 4 to 5 minutes, whisking every minute or so, until it coats the back of a spoon and a dragged finger leaves a clean line.
Turn the heat to low, sprinkle in the Parmesan, salt, pepper, and nutmeg, and stir until melted. Taste and adjust. To thin a sauce that has thickened too much, whisk in a splash of warm water, milk, or pasta water.
