Cozy Vegetarian Lentil Soup

  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced

  • 1 1/2 cups dried brown or green lentils, rinsed
  • 1 can (14 oz) crushed tomatoes
  • 6 cups vegetable broth
  • 3 tbsp tomato paste
  • 2 tsp smoked paprika
  • ground cumin
  • 1/4 tsp red pepper flakes (optional)
  • 1 bay leaf
  • to taste salt
  • to taste black pepper

Finishing Touches

  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 2 cups chopped kale or spinach (optional)

Instructions
 

  • Set a large Dutch oven or heavy-bottomed pot over medium heat and add the olive oil. When it shimmers, add the diced onion with a pinch of salt. Cook for 5-6 minutes, stirring occasionally, until the onion is soft and just starting to turn golden at the edges.
  • Stir in the carrots and celery and cook for another 4-5 minutes until they soften and sweeten.
  • Add the garlic, tomato paste, smoked paprika, cumin, and red pepper flakes (if using). Stir constantly for about 90 seconds. The paste will darken, turn glossy, and cling to the bottom of the pot. That glaze is flavor.
  • Pour in the crushed tomatoes and vegetable broth. Scrape up any browned bits from the bottom of the pot, then add the rinsed lentils and the bay leaf.
  • Bring everything to a gentle boil, then reduce the heat to low and cover with the lid slightly ajar. Simmer for 25-30 minutes, stirring once or twice, until the lentils are tender but still hold their shape.
  • Fish out the bay leaf and stir in the lemon juice, salt, and black pepper. If using kale or spinach, toss it in and stir for a minute or two until wilted.
  • Turn off the heat and let the soup rest for 5-10 minutes. It thickens beautifully as it rests. Ladle into bowls and finish each with a drizzle of olive oil and a crack of black pepper.

Notes

Use brown or green lentils here, not red — red lentils dissolve into mush. Don't skip the lemon juice; it brightens the smoky broth. For a thicker soup, mash a few cooked lentils against the side of the pot before serving. Store in the fridge for up to 5 days or freeze for up to 3 months. Reheat gently on the stovetop with a splash of broth.
