Cottage Cheese Pizza Bowls That Are Actually Crispy on Top — in 20 Minutes

In 20 minutes you get a golden, crispy-edged bowl that tastes like pizza with almost zero effort. The trick is draining the cottage cheese and using a shallow dish — that's the difference between watery and caramelized. My kids devour these. This is weeknight magic.

Ingredients
  

  • 1 cup cottage cheese, full fat, drained if watery
  • 3 tablespoons pizza sauce (your favorite jarred kind)
  • 1/4 cup shredded low-moisture mozzarella
  • 8-10 slices mini pepperoni (or regular, quartered)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 pinch red pepper flakes

Instructions
 

  • Preheat oven to 400°F. If cottage cheese looks watery, dump it into a fine-mesh strainer set over a bowl and let drain for 1 minute while you prep other things.
  • In a small bowl, mix the drained cottage cheese with garlic powder, oregano, red pepper flakes, and a tiny pinch of salt. Spread it in your baking dish, leaving some peaks and ridges on top for crispy bits.
  • Spoon pizza sauce over the cottage cheese base. Don't stir it in - leave it on top. Use the back of a spoon to make subtle swirls into the cottage cheese.
  • Sprinkle mozzarella evenly over the top. Distribute pepperoni slices across the surface. Don't overcrowd - a few gaps are fine and they'll brown beautifully.
  • Place dish on a sheet pan and bake for 15-18 minutes, until edges are deeply browned and bubbling and center is just barely set. Look for dark golden spots on the cottage cheese - that's the crispy magic.
  • Let rest for exactly 2 minutes (don't skip!). Top with fresh basil, olive oil, or more red pepper flakes. Dig in while the cheese is stretchy.

Notes

My honest advice after 30 batches:
1. Don't skip the preheat – a hot oven gives you that initial sizzle on the bottom.
2. Use a shallow dish – more surface area = more crispy edges.
3. Season the cottage cheese base – plain tastes flat.
4. Let it rest for 2 minutes – or it will be runny.
Storage: Fridge in sealed container for up to 4 days. Reheat in oven at 350°F for 8-10 minutes or air fryer at 350°F for 5-6 minutes to bring back the crisp. Not recommended for freezing.
