Brown Stew Chicken That's Rich, Savory, and Deeply Comforting — in One Pot

Ingredients
  

For the Chicken & Marinade

  • 3 lbs bone-in, skin-on chicken thighs and drumsticks
  • 1 tbsp ground allspice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tbsp Jamaican browning sauce (for marinade)

For the Sauce

  • 2 tbsp vegetable oil
  • 2 tbsp brown sugar
  • 2 tbsp Jamaican browning sauce (for sauce)
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 whole Scotch bonnet pepper, pierced
  • 6 sprigs fresh thyme
  • 2 cups low-sodium chicken stock

For Garnish (optional)

  • 1 bunch scallions, sliced

Instructions
 

Prep and Marinate

  • In a large bowl, toss the chicken pieces with 1 teaspoon salt, 1/2 teaspoon black pepper, the ground allspice, minced garlic, grated ginger, and 1 tablespoon of the browning sauce. Let sit for 20 minutes at room temperature.

Sear the Chicken

  • Heat 2 tablespoons vegetable oil in a 5-quart Dutch oven over medium-high heat. Add chicken pieces in a single layer — do not crowd. Sear for 4 minutes per side until deeply golden and crusty. Transfer to a plate and repeat with remaining chicken.

Build the Sauce Base

  • Pour off rendered fat, leaving about 2 tablespoons in the pot. Add the brown sugar and stir constantly over medium heat until it melts and turns a dark amber, about 2 minutes. Stir in the remaining 2 tablespoons browning sauce — it will bubble dramatically. Add sliced onion, bell peppers, and the pierced Scotch bonnet. Cook for 3 minutes, stirring occasionally, until vegetables begin to soften.
  • Pour in the chicken stock and scrape up any browned bits from the bottom of the pot with a wooden spoon. Add the fresh thyme sprigs and return the seared chicken and any accumulated juices to the pot.

Simmer and Finish

  • Bring the liquid to a gentle simmer. Cover the pot, reduce heat to low, and cook for 45 minutes.
  • Uncover and let simmer another 10 to 15 minutes until the sauce has reduced by about a third and is thick enough to coat the back of a spoon.
  • Turn off the heat and let the stew rest for 10 minutes. The flavors will settle and the sauce will thicken further. Garnish with sliced scallions if desired. Serve over white rice or rice and peas.

Notes

Don't skip the browning step — it's where half the flavor comes from. Handle the Scotch bonnet carefully; leaving it whole perfumes the dish without making it punishingly spicy. Let the stew rest off the heat for 10 minutes before serving. Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. Reheat low and slow on the stovetop with a splash of stock if needed.
