Equipment

  • Large Mixing Bowl
  • Hand mixer or stand mixer
  • Baking Sheet
  • Parchment Paper
  • Cookie scoop or spoons
  • Cooling rack

Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Cream the butter and sugars: In a large bowl, beat softened butter with both sugars until light and fluffy, about 2 minutes. (Photo tip: You should see the mixture lighten in color and look fluffy — that's your signal.)
  • Add egg and vanilla: Beat in the egg and vanilla until fully combined. Scrape down the bowl.
  • Whisk dry ingredients: In a separate small bowl, whisk together flour, oats, baking soda, salt, and cinnamon (if using).
  • Combine wet and dry: Add the flour mixture to the butter mixture in two batches, mixing on low until just combined. Don't overmix or the cookies will be tough.
  • Fold in the blueberries: Gently fold in the blueberries with a spatula. If using frozen, do this quickly — the cold berries will stiffen the dough.
  • Chill the dough: Cover the bowl and refrigerate for 10 minutes. This is the non-negotiable step that keeps cookies from spreading into one giant cookie. (Photo tip: After chilling, the dough should be slightly firmer but still scoopable.)
  • Scoop and bake: Drop rounded tablespoons of dough (about 1 1/2 inches apart) onto the prepared baking sheet. Bake for 10–12 minutes, until the edges are golden and the tops look set. The centers will look slightly underdone — that's correct.
  • Cool on the pan: Let the cookies rest on the baking sheet for 3 minutes before transferring to a wire rack. This sets the structure without drying them out.

Notes

Don't thaw frozen berries or the dough will turn purple. Use parchment over silpat for better spread control. The 10-minute chill is non-negotiable. Store baked cookies in an airtight container at room temp for up to 5 days; they get softer on day 2. Freeze dough balls for up to 3 months, bake from frozen at 350°F for 12-14 minutes.
