Ingredients
  

  • 1 pound flank steak (or sirloin)
  • 4 cups fresh broccoli florets
  • 3 tablespoons soy sauce (divided)
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons cornstarch (for beef marinade)
  • 1 tablespoon cornstarch (for slurry)
  • 3 cloves garlic (minced)
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons vegetable oil (or avocado oil)
  • 1 teaspoon toasted sesame oil
  • 1/2 cup beef broth (or water)
  • cooked rice for serving

Instructions
 

  • Get the rice going: cook jasmine rice (1 1/2 cups rice, 2 cups water, pinch salt, splash of oil) bring to boil, cover, simmer 15 minutes. Let sit off heat.
  • Slice the beef thinly across the grain, about 1/4-inch thick. Toss with 1 tablespoon soy sauce and 2 teaspoons cornstarch. Let marinate while you prep.
  • Blanch broccoli florets in boiling water for 45 seconds, then drain and rinse under cold water. Shake off excess water.
  • Mix the sauce: whisk remaining 2 tablespoons soy sauce, oyster sauce, brown sugar, beef broth, minced garlic, and grated ginger in a small bowl.
  • Make the slurry: stir 1 tablespoon cornstarch with 2 tablespoons cold water until smooth. Set aside.
  • Sear the beef in two batches: heat 1 tablespoon oil in wok/skillet over high heat until shimmering. Add half beef in a single layer, cook 30 seconds without moving, flip, cook another 30 seconds. Transfer to plate. Repeat with remaining oil and beef.
  • Flash the broccoli: toss blanched broccoli in the hot pan for 30 seconds to char slightly. Push to sides or remove.
  • Build the sauce: pour sauce mixture into pan, bubble 30 seconds, stir in slurry. It will thicken immediately. Return beef and broccoli, toss until glossy.
  • Off heat, drizzle toasted sesame oil, toss once more. Serve immediately over rice.

Notes

Tips: Pop beef in freezer 15 min for easier slicing. Don't overcrowd pan—cook in batches. Pre-blanch broccoli for crispness. Taste sauce before adding beef. Swaps: gluten-free with tamari; chicken or pork work; adjust garlic/ginger for kids.
