Equipment

  • Air Fryer (6-quart basket style)
  • Medium Mixing Bowl
  • Tongs
  • Paper towels

Ingredients

  • 1 lb skinless salmon fillet (about 1 inch thick)

Marinade

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 2 cloves garlic, grated
  • 1 teaspoon fresh ginger, grated

Coating

  • 1 tablespoon cornstarch

For Serving (optional)

  • sesame seeds
  • sliced scallions
  • chili crisp or extra soy sauce

Instructions

  • Cut the salmon into 1-inch cubes and pat dry. In a bowl, whisk soy sauce, honey, sesame oil, garlic, and ginger. Add salmon, toss to coat, and let marinate for 5 to 10 minutes.
  • Sprinkle cornstarch over the salmon and toss until every piece is lightly coated.
  • Preheat the air fryer to 400°F for 3 minutes.
  • Arrange salmon cubes in a single layer in the air fryer basket, leaving space between pieces. Cook in batches if needed.
  • Air fry at 400°F for 4 minutes, then shake or flip. Cook another 2 to 4 minutes until deep golden brown and flaky.
  • Let rest in basket for 1 minute, then transfer to a plate. Garnish with sesame seeds and scallions. Serve immediately.

Notes

Pat the salmon dry before marinating and again before adding cornstarch for maximum crispiness. Don't overcrowd the basket — cook in batches if needed. Leftovers keep in the fridge for 2 days; reheat in the air fryer at 350°F for 2 minutes.
