Cut the salmon into 1-inch cubes and pat dry. In a bowl, whisk soy sauce, honey, sesame oil, garlic, and ginger. Add salmon, toss to coat, and let marinate for 5 to 10 minutes.
Sprinkle cornstarch over the salmon and toss until every piece is lightly coated.
Preheat the air fryer to 400°F for 3 minutes.
Arrange salmon cubes in a single layer in the air fryer basket, leaving space between pieces. Cook in batches if needed.
Air fry at 400°F for 4 minutes, then shake or flip. Cook another 2 to 4 minutes until deep golden brown and flaky.
Let rest in basket for 1 minute, then transfer to a plate. Garnish with sesame seeds and scallions. Serve immediately.
